It’s about that time of year again! Busy shopping malls, beautiful trees and baking…lots and lots of baking. If you are anything like me (other than the birth of baby Jesus of course), this is one of the best parts!! I love to do some Christmas baking for my family and friends when the weather gets cold.
Unfortunately, baking for myself and other people got a little tricky when I changed my diet. I could either make something for gluten free eaters like me or I could bake an entirely different recipe for my family and friends.
What You’ll Need:
- 1 Box of Betty Crocker’s Gluten Free Yellow Cake Mix
- 1/2 Cup Butter or Margarine
- 1 Tsp Vanilla
- 1 Serving of Egg Replacer
- Red and Green Coloured Sugar
Begin by preheating the oven to 350° F. Add all of your ingredients except for the coloured sugar into one large bowl and mix with a spoon until dough forms.
Shape the dough into approximately 1 inch balls with your hands and place them 2 inches apart on to an ungreased baking pan (you may want to put them on parchment paper for easier clean up). Flatten them on the sheet with the bottom of a glass dipped in the green and/or red sugar.
Put the cookies in the oven for 9 to 11 minutes or until set. Remove them from the oven and let them cool on the sheet for 3 to 5 minutes and then move them to a cooling rack.
If you are giving these as a gift, place them in a Christmas tin or mason jar with a festive ribbon tied around the top!
